Rustic Pastry Savory and Sweet
Highly adaptable quick and easy option for dinner and dessert. Fresh and flavorful ingredients make this recipe a memorable meal.
puff pastry (store bought or homemade)
balsamic vinegar (high-quality (balsamic reduction recipe in notes))
Savory Topping Ingredients
cherry tomatoes (, halved (quartered if larger))
garlic (, thinly sliced)
red onion (, thinly sliced)
oregano (, fresh or dried)
sea salt
olive oil
Sweet Topping Ingredients
peaches (, 1/4 inch slices)
plums (, 1/4 inch slices)
figs (, 1/4 inch slices)
pistachio (, crushed and toasted)
Demerara sugar ((optional))
Preheat oven according to your puff pastry instructions. I used 180 C (350 F).
Line a baking sheet with foil or parchment paper and brush lightly with olive oil.
Roll out the desired amount of puff pastry onto baking sheet. Top with ingredients. Sprinkle sea salt on top of savory toppings. Sprinkle sweet toppings with Demerara sugar (optional).
Bake for the time instructed by puff pastry brand. My bake time was ~25 minutes. You'll want the pastry to be puffed and be a light golden brown.
Allow pastries to cool slightly before cutting. In the meantime, drizzle a little olive oil across the savory pastry and extra oregano. Finish the sweet pastry with a drizzle of balsamic vinegar and crushed pistachios.
If you have some vanilla ice cream on hand, a scoop on top of the sweet pastry can only make it better! Re: Balsamic Vinegar - I don't recommend pouring on thin generic balsamic vinegar. I'd leave it out in that case. If you don't have a high-quality one like Traditional Balsamic Vinegar of Reggio Emiilia you can make a great alternative.
